Guignolet way grandmother

Aperitif easy to prepare in July when the leaves of cherry trees are green


In a can or assembly, assemble:

 

  • 10 liters of red wine (13 ° or more)
  • 400 to 500 green leaves of cherry (to be picked in July after the cherry pickings)
  • 2 kg of sugar
  • 2 sachets of vanilla sugar
  • That is all (the chloroplasts of the leaves will make a reaction with the alcohol of the wine and give the scent of cherry)


Close (not hermetically, just to protect midges)

Leave to stand for 3 days stirring 1 to 2x per day (so that the leaves soak well)
Then filter the contents to remove the leaves (which have become brown if they have been soaked: the chloroplasts are "cooked")


Add 1/2 liter of kirsh (for storage).

The liquid obtained can be stored in bottles or in a cylinder.
We can drink it right away but it's better if you can let it age 1 or 2 months (this is impossible but imagine).
